What is the difference between Timemore Sculptor 064 and Timemore Sculptor 064S?

The 064 model is designed primarily for drip brewing methods (filter, pour-over) and features a stepped grind adjustment. The 064S version has a different burr geometry and stepless grind adjustment, enabling it to grind finely and evenly enough even for espresso. If you plan to make espresso, you will need the 064S variant; the Model 064 itself is not designed for this purpose.

Thanks to the mechanical ‘Rotary Knocker’, which, when rotated, knocks any remaining ground coffee directly out of the outlet, the 064S achieves very low retention, typically in the order of tenths of a gram. The grinder allows you to set the rotational speed of the burrs within a range of 800–1200 RPM. For espresso, a lower speed is generally recommended, around 900–1,000 rpm, as this reduces the formation of fine dust (fines) and the heating of the beans, which enhances the purity of the flavour. Higher speeds speed up the grinding process, but may slightly increase the amount of fines.
