The puck screen is a fine metal mesh placed on top of the ground coffee in the portafilter before espresso extraction. It is made to spread the water pressure evenly across the surface of the coffee puck and to protect the coffee from the direct water flow from the group head of the machine.
During extraction, espresso machines push hot water at high pressure onto the coffee. Without protection, the water can move faster through some areas, causing uneven extraction (called channeling). The puck screen helps to spread the water flow, protects the coffee surface, and supports even flavor extraction.
